This sweet snack is very popular among Malabar muslim community. They make this especially during their festivals.
2 big medium ripe banana – Ethapazham
1 cup grated coconut
2-3 tbp Cashews
2-3 tbsp Raisins
2 tbsp sugar
1. Steam the banana until its cooked. Peel off the banana and smash it with hands. While smashing it remove the black seeds of banana.
2. Heat ghee. Add cashews and rasins and fry them until its nicely roasted. Add coconut and fry them until the color of coconut changes slightly. And at last add sugar and mix them.
3. Take a small ball of smashed banana in hand and press flat. Place about 1 tbp full of coconut mix and roll it up to make a cylinder shape.
4. Heat oil and fry the banana rolls without breaking it.fry them until its golden brown.
TIP : If the banana gets over cooked and becomes too soft that you are not able to roll it up, then add 1-2 tbsp of corn flour or all purpose flour to it.
