3 cup chopped carrot
1 ½ cup chopped bell pepper/capsicum – I used red bell pepper
1 cup grated coconut
1-2 pearl onion
5-6 green chillies
2-3 cloves garlic
½ tsp turmeric powder
1. Crush together coconut, green chilies, garlic and turmeric powder. Heat oil and sauté the crushed coconut mix until the raw smell is gone.
2. Add the chopped carrot, capsicum, 1/2 cup water and salt. Cover the pan and cook the vegetables until soft. When the vegetables are well cooked, remove the cover and fry them until all the water is evaporated and the vegetables become dry. Carrot capsicum thoran is ready. Serve it with rice.
